Faux Cookie Dough Dip

Sunday, January 27, 2013

I was going to post something more introspective about my week-of-drastically-off-plan-e
ating...but I stumbled upon this on pinterest and ALL THE PRESSES MUST STOP. This is a WONDERFUL AMAZING OUTSTANDING RIDICULOUSLY AWESOME find. It's a healthy, no grain version of cookie dough. Not for making cookies with...for just eating straight. The way God intended for us to eat cookie dough.

I know, read the ingredients and it sounds crazy. But I'm here to tell you, it's crazy like a fox. The recipe comes from
. I made some of my own tweaks in the parts where she gives you options, so I put it into SP recipe tracker as below:

1 can chickpeas, drained and rinsed very well
dash of kosher salt (not more than 1tsp)
dash of baking soda (like 1/16 tsp)
2 tsp pure vanilla extract
3 tbsp raw almond nut butter
2 tbsp light agave nectar
1 tbsp stevia in the raw (not pictured)

Add all ingredients to a good food processor (not blender), and blend until very smooth. Add chocolate chips or whatever else you might like to the final "batter" Don't cook this, just eat it like "raw" cookie dough. Serving Size: 1 oz

The red bowl is 5 servings, with chocolate chips. The little bowl is one serving, after I ate one bite.

And the nutrition is without chocolate chips, since you can buy whatever type of chips you like and they apparently make a sugar free version if you are into that.

In the future, I'd add some almond or skim milk and a tbsp or so of flaxmeal just to see what happens. But right now I'm in love with it this way...I'm keeping it in the fridge and will freeze a couple servings as well, in hopes that it will feel like chocolate chip cookie dough ice cream. This seems like it would be a good addition to other things too - like maybe the middle in a cookie dough cupcake? Or smooshed between graham crackers and frozen like an ice cream sandwich?

Hahaha! I saw this on the original website (I love chocolate covered katie, she's so cute!). I have been way too freaked out to try it. Doesn't it... taste like chickpeas?????

If it does not taste like chocolate chip hummus, maybe I will finally try it after all...

Yeah... I like to make and eat straight cookie dough, but it sounds like your version is a little healthier than mine
