Day 14... Awesome Thai Soup and a Weigh-In

So, on day 14 I was a bit sick. In the middle of the night I was freezing cold with achy joints and skin that felt like someone poured acid on it. I slept until 11am and woke up feeling not terrible, but not great. I got up and wandered to the basement to do my weigh-in. The scale said I was down 4.6 pounds from last week. Yippee!! I was so thrilled with that.

I spent the rest of the day, laying on the sofa trying to convince myself to eat. I ate a handful of nuts because those really burn up your calories for the day. I ate most of my calories for the day and went to bed early.

Before I got sick, I made another recipe from Chef Meg. It was freaking awesome! You know that creamy mushroom coconut soup you get at Thai restaurants? It's her make-over of that soup. It was a definite make again for my family. Recipe is linked below. I highly recommend it. My family had never had the soup before and gobbled it up.

To go with it, I made Crispy Baked Eggrolls... also from Spark Recipes. Mine didn't get crispy enough for our tastes, but I am going to make them again and try to get them crispier. The insides tasted great. I didn't have bean sprouts, so I threw in a cup of match stick carrots. I halved the recipe for my family of 3 and it worked out well. I only ate 2 and was stuffed.
