Bountiful Baskets Challenge

One of the best things about the WW Points Plus system is that most fruits and veggies are considered "freebies," meaning they have a zero points value. I love this because it helps me feel like I can always have something to eat, and it puts my focus back where it belongs - on healthy foods.
Last year I gave myself a challenge, and I plan to pick it up again this year. Each week I would order at the minimum the basic basket from Bountiful Baskets. My challenge was to use the entire basket by the beginning of the following week, without wasting anything. For those of you unfamiliar with Bountiful Baskets, I will post a photo to give you an idea of what one basket looks like:

The only exceptions to my challenge took place when things needed to ripen, like the pineapple above.
One of my major goals for January is to increase my fruit and veggie intake. I'm working on it and want to keep going to make it better.
My changes and progress are slow right now, and I'd like to do something to make it faster. I just don't know what I can feasibly commit to at the moment. I am drinking more coffee and tea instead of soda, and am increasing my water intake also. I plan to be more active by the end of this month as well. I think I need a challenge to get me going on that one too. I'll post back later if I find something.
