2013 Day 16 Oh come on

I managed to miss blogging yesterday, thus not meeting one of my goals for January. I guess if I only miss one then it's all good.

I was grading papers last night and came across 3 students who had copied their answers from another student. They showed their work brilliantly...the problem was the work was for a different problem. Then on top of that, I only had 5 of the 18 students show up for remediation this morning. I was on a roll that carried me through the whole day. Before I knew it, I was in the gym on the treadmill and halfway through my 30 minutes. Getting mad makes the day go quickly. I'm trying trying trying to keep a positive attitude but there's only so much I can take. I didn't yell and scream...no point in that. But I did express my shock and disappointment.

Also on the Done list from yesterday was making all the mini pizzas. 18 total though I've eaten 3 of them already. So easy to make and so good. They're all packaged up in the freezer just waiting to be popped in the microwave when I don't feel like cooking.

So here's a question for you...What's your favorite freezer meal?

    I love making a big pot of soup -- vegetable beef is probably my favorite -- and then I freeze about 2 cups in freezer bags to eat later.

    I would love to know how you make your little pizzas! I make burritos 10 at a time and freeze them for my daughter who is a vegetarian. You can get a whole grain torilla, spread ff refried beans, layer some black beans, some whole grain rice and them some shredded cheese. Roll it up and saran wrap it and you have a meal in 2 mins. in the micro.
