LOL! Basically I actually did batch cook

Crockpot Buffalo Chicken - Done and Gone

Spaghetti Squash Lasagna - Done

Peel Sliced Oven Potatoes - Done and Almost Gone
I actually went through the entire bag without throwing any away! Big accomplishment!

Tomorrow is Beef Stew in the Crock pot and leftover Lasagna at lunch

I hope to pop the kale in the oven and try it with the ground tumeric.

I have walked two miles two days in a row! Go me!

I haven't addressed financial issues in a while. They are still there. We still live off credit although we now have the involvement of a credit counselor. He told us that our food budget is 50% below national average. 50% of our income goes to debt. We have $10,000 in hospital bills from last year with Joey and myself from delivery to croup. I've enrolled us in indigent care and I'm awaiting response. I don't have a job but I'm selling on ebay when I can spare the time. I have about 10 items up now. I'm seriously considering opening up an EBay store so that I have have items up round the clock. I'm also looking at putting up some items on Yardsellr as well. Other than that I stay home with Joey. I would like to until he's old enough for Pre-school at least.

Still taking the Vitamin D. I'm considering spending some money for a one month membership to one of the tanning bed places just because of how helpful it was to other Sparkers out there who told me so. I paid $150 for a anti-cavity kit to help prevent any more cavities. After 8 found already, I don't want anymore!! I still can't have these filled until July though because our FSA account does not roll over until then.

    I did some batch cooking too. I love it!!

    I would love to learn to sell on ebay as well. I have tons of stuff I inherited from my mom I really don't want and things of mine I don't want.

    If the weather is nice enough, maybe you could take Joey to a park to get your daily dose of vitamin D. that's great about your batch cooking.

    Great job with batch cooking! I do that alot. I cook every other day or so, making enough that we can have leftovers. I don't always plan on making too much though, I am sill learning how to cook for 2 after years of cooking for 4!

    It's good to see that you are seeking help with your financial issues. I take vitamin D too, but spend time outside daily (even when it's cold out!). I'm glad you are able to stay home with Joey, I stayed home with my kids for 10 years and I think it made a big difference in their lives!
