Lentils and Rice

The other day at Whole Foods, I bought a bag of mixed brown rice, red lentils, and wild rice. I decided to pair it with some mexican spices. It turned out very tasty. This would be good wrapped in a tortilla. My husband liked it! I added the spices suitable to my taste can definitely add more!

Mexican Lentils and Rice

1 cup mixed lentils/rice
1 teaspoon chili powder
1/2 teaspoon cumin
1 teaspoon onion powder
1 garlic clove, minced

Place lentils/rice and 2 cups of water in a pot on a stove. Bring to a boil. Put a lid on the pot and turn down to a simmer. Simmer mixture for 30-45 minutes. During the last 5-10 minutes, add spice mixture and garlic.

Today I also cleaned out the freezer. I got rid of a lot of red meat that looked freezer burnt. I also discovered that I had 3 bags of peas! I LOVE peas! I love how they crunch when you eat them. I made a big batch for dinner and to eat tomorrow.
