I am learning to marinate....

On my spark nutrition tracker for thursday is lemon chicken.

I did pre-plan . And I did go grocery shopping for the week.

So, today I looked at the tracker to see what dinners I needed to think about.

So the chicken is in a plastic bag marinating. emoticon

You may not think that is astounding, but I do. I NEVER think ahead for meals like this.

I just have not been able to 'get this together!'

While I was teaching, forget it. Dinner barely got prepared. A hunk of cheese, frozen veggies microwaved with no seasoning, snack foods, a banana...... well no planning and pretty much no stopping eating all evening.... emoticon It is a year since I have not been working and I am getting the hang of it.

I looked through my spices. Oregano? No, but there were 3 bottles of Italian spice. Basil? Yep I had several bottles of dry basil and 1 container of frozen basil!

White wine vinegar--YES! It even was fresh and unopened. I have been trying to cook for awhile and have been stocking up. Also there was lemon juice in the fridge.

I did it! I had all the ingredients--even the pre thawed chicken! emoticon

so the chicken can marinite overnight and I will bake it tomorrow!

    I am just the opposite--I used to plan and cook delicious, complex, amazing meals. Now I throw a turkeyburger on a pile of spinach with some fancy balsamic vinegar and call it good. Last night's dinner was an apple and a carton of greek yogurt. I really only cook anymore if I am having guests or throwing a party.

    Taking the "whole foods" thing kind of literally seems to work for me. :)

    It feels good to plan ahead and follow through. Less stress and less temptation to rely on convenience foods or eating out which is less healthy (and often more fattening). Keep up the good work!

    My aunt retired 3 years ago and she is starting to bake and plan meals out now. Have fun with it.

    Everyone has to start somewhere. We all make mistakes and forget some things, but the important thing is to keep doing it.

    When you make your shopping list each week you can make a note of which days you need to do prep work for a future meal. Keep that list somewhere you see it to remind yourself of what you need to get done.

    For ease and simplicity, I often empty the whole bag in the crock pot and cook it in the marinade. Comes out tender and yummy!
