Those three things (well mostly just the first two, but I dream often about the third) have been my life pretty much.
A few weeks before the holidays started, the boyfriend and I decided it would be nice to get out into nature when not that many people (or bears, or bugs...) were out there as well, just to escape 'reality' for a little bit. That ended up turning into hiking a day out of each weekend since! It's even better now that the days are slowly getting longer, so we can stay out a little more each time.
Lately, we've been doing on average about 3 hours, if not more (usually more) or 2.5 hours if anything. All sorts of different terrain, from rock scrambling to crossing streams or walking across frozen ice. It's been a LOT of fun and a good way to get in some exercise/outside time in the relative peace and quiet of a snowy forest.
We also hike with packs (with extra warm gear, fire starting kits, first aid, etc. just in case something may happen when we're out there and not that many other people are), so I'm adding 10+ pounds of gear to my hiking attire. It's also been a nice way to test out cold weather gear and layering systems, get used to walking around in trail crampons over ice/snow and also break in a nice new pair of winter hiking boots that my parents got me for Yule.
With all this stuff & trying to dial in my food choices (since the holidays aren't the best time to eat clean), I've definitely been treating myself once in awhile. Last weekend we went out to dessert with a friend of mine, just to chat and catch up and I housed a Belgian waffle with strawberry ice cream, whipped cream and chocolate sauce. And it was amaaaaazinggggg.
We also tried a new Brazilian place recently and I had a cold bean/grain/veggie salad that was pretty much out of this world. Other than that, it's our usual weekly dinner fare of traveling around the world -- Greece, Turkey, Japan, Mexico, India, Thailand & Ireland! Even if I don't have the money to travel, I guess my taste buds can still pretend...
Hope everyone is enjoying the first few weeks of January -- it's been some rather hectic ones for my friends lately!
