Weekly Menu and Chocolate Tip!

I have been getting good responses when I post my weekly menus so I will continue again this week! Last night we had the homemade pizza which was delicious in spite of the fact that all the delicious veggie toppings made the crust soggy and we had to eat it with a knife and fork. Our pizza had onions, yellow bell peppers, mushrooms, pineapple chunks and sliced black olives. Yum! I just used canned tomato sauce with no salt added as the base, and spiced it up with oregano, garlic powder and Parmesan cheese. I ate more than I intended but I was only over my calories by about 200 because I decided I NEEDED hot cocoa during Downton Abbey.

So here's this weeks menu!

Tonight: Bacon Tomato Linguine w/ Spinach Salad (I already cooked the bacon in the oven and the entire house smells amazing. =) )

Tues: Pork Chops w/ Creamy Mushroom Sauce & Some sort of veggie

Weds: Smoked Turkey Sandwiches (Smoked turkey lunchmeat, mild cheddar, lettuce, tomato, olive oil mayo, on 45 calorie/slice toast) w/ Tostitos Artisan Black Bean & Roasted Garlic Tortilla Chips plus baby carrots.

Thurs: Black Bean & Chicken Chilaquiles w/ Queso Blanco (I am SO looking forward to this one)

Friday: Real pizza from the pizza joint down the street. I'm going to get a small so I don't go crazy and split an order of 5 chicken wings with my husband. Might get a salad too to bulk it up.

Saturday: Keftedes & Greek Salad - Keftedes are like Greek meatballs seasoned with onions, garlic, cinnamon, nutmeg and coriander. I'm going to serve them over a fresh Greek salad with reduced fat feta.

Okay, now here's my chocolate tip.

I am on a limited budget, both money and calorie-wise. Candy is high in calories and hard to portion control for me, because it is sooooo delicious. So here's what I did this week:

I bought a bag of Ghirardelli 60% cacao baking chips. They're slightly larger than regular chocolate chips, and they're dome shaped. There are 16 in an 80 calorie serving. I count out 16 of them exactly, put them in a tiny dish, and I savor every one of them. It usually takes me 5 - 10 minutes to eat them, unlike a Twix Bar that I would scarf down in 2 seconds. And it's only 80 calories!!!! I also keep a back of Dove dark chocolate promises, and I try to only eat 1 or 2 of those a day MAX. Two of those is about 80 calories.

    Chocolate chips are a dangerous thing in my house. I guess because they are so little, I don't think they count as much as a regular bar of chocolate. I once had a bag of andes mint chocolate chips...oh those SO did not last.

    I agree with CJADERUN that the pineapple chunks likely contributed to the sogginess of the pizza. Maybe try pineapple tidbits or smaller pieces? And put them on close to when the pizza is finished cooking?

    Oh man, your menu sounds delicious. Do you have a specific recipe for Keftedes? I'm learning Greek food is fab, and I've never heard of those.

    Great chocolate tip! I never thought of snacking on the baking ones. {I originally typed "bacon ones", so you can see where my mind is!}

    Your pizza sounds yummy. Soggy or not, homemade beats store-bought hands down! Of course, everything tastes better if you don't have to cook it yourself, so I can appreciate the desire to have pizzeria fare.

    Pizza Pro-Tip: Precook your veggies. My mom likes to saute her onions ahead of time, and sometimes I'll even precook my peppers!

    Not to mention, those pineapple chunks probably were the MAJOR culprit to your soggy dilemma. But I don't know you can really precook those...bake them, maybe?

    Sounds like a good week! I'm eating extra steak salad Boyfriend made on Sunday for yesterday and tonight, and don't know what I'll do tomorrow. (Boyfriend is out of town, otherwise he'd cook for me since I don't get home until 8:30/9.)

    Considering how tired I was last night, I might not eat tomorrow if I can't find something easy.

    Maybe I'll just hit up Panera.

    When I do pizza, I often cook the veggies separately and then toss them on the crust after it has been pre-baked for a bit. You can put some cheese over that and put it under the broiler for a minute to get brown and melty. Cooking your pizza on a pizza stone will also help with the crispiness factor.

    Your meals sound great, and I am so impressed that you can plan a whole week out. I can barely think about tonight. emoticon

    It was the chocolate tip that lured me! Great idea. I find that if I buy really good very dark chocolate then just one piece is enough. When get the ordinary cheap bars etc can scoff them down in no time

    Your menu sounds delish! There is a Greek restaurant near me that has amazing food. They serve Karpathian Makarounis, which is sort of like whole wheat pasta (think cavatelli shaped) with a butter and frizzled onion sauce, sprinkled liberally with Greek cheese. It is SO yum!!

    Oh snap, that's a great chocolate.. chip.. tip.. loool

    I'm not a big fan of dark chocolate, mostly because it is so bitter, and milk chocolate is so creamy and sweet! In this past year, I've had to learn to love black coffee (though I only drink 2-3 a month), so I might as well get over my "thing" with dark chocolate! I've heard that small ammounts of dark choco can be really good for you anyway :X

    Did you sautee the veggies before putting them on the pizza? I found that it helps get some of the water content out if I sorta sautee the veggies with a tiny bit of olive oil spray stuff.

    That is a GREAT tip about the chocolates. I'm seriously gonna do that. I have a quarter bag of Reese's peanut butter chips leftover from the holidays, and I think I'll mix that and some dark chocolate chips! Low cal pb cup substitute anyone? Thanks for the inspiration - you are ahmaaazing!
