Omelet of fail

I have exams at the moment and since I don't have a lot of time to cook I though I'd try omlet.

This was the result

It looks like puke emoticon

I used:

2 eggs
1 small carrot
1/4 courgette
1 celery salk
2 chopped slices of parma ham
brown rice to bulk it out (leftovers from yesterday)
mixed herbs
garlic powder
salt and pepper to season

Although it doesn't look appetising it tasted fine and was super quick to make plus healthy emoticon

I wonder if it fell apart because I didn't put any cheese in it?

    When I make them at our restaurant, II use a 7" skillet. Cook the eggs that are mixed with a tiny bit of half and half but you could do skim or lowfat also. Let that get thick with a lid on it. Fix everything else on the grill and add to one half of the omlet in skillet. I do sprinkle cheese to keep it together. But you can use a lowfat or light cheese in it as well. It will still melt. THen fold it over in half. I dont try the trifold because they seem to fall apart more. Hope this helps.

    Instead of an omelette, I make what I call an egg scramble. I use the same ingredients I'd use for an omelette, but just cook them like I would scrambled eggs. The advantage is that the egg cooks evenly. I actually prefer it.
