Day 9 - Lentil soup

All challenges met emoticon

Finding out about the effects of raw spinach on thyroid function was quite upsetting - so no spinach today!

Breakfast - eggwhite, chia seeds, strawberry and blueberry smoothie with ginger and cinnamon. pot of Irish Breakfast tea.

Snack - bowl of ruby red grapefruit (so much nicer than the yellow grapefruit!)

Lunch - 3-4 oz of rotisserie chicken, 3/4 cup mashed sweet potatoes and brussel sprouts

Snack - 15 almonds, pot of english teatime tea

Dinner - Lentil soup

This so good!! The lime juice made it a little tangy to give it that mexican flavor. It was good without the lime juice too - I had a taste to check the done-ness of the lentils :)

It is a very easy and quick recipe. I started it in a pan and then transferred it to my crockpot as my burners don't go low enough for simmer.

    Looks delicious! So sorry about the spinach thing! Glad you shared your discovery though!

    I am still coffee free, but it is not SANS headache! Oh well!

    Lol :-D we keep having similar food. I also made lentil soup yesterday! I make mine with onions tomato and cilantro blended into the broth and top it with raw chopped onions :-). I used a sprouted bean trio for it instead of just lentils. So yummy. Yours looks delicious. Congrats on day 9! You are on a roll now. I bet you are starting to see some progress ;-)

    Just looked at the recipe you used and it is very similar to how I make mine. It is just missing the carrots and zucchini. Mmm I will probably have it for lunch today.

    What great choices you made. Recipe sounds great. I just made the following (twice because so good!)
    Lentil Chili
    1 onion, chopped
    1 tsp. cumin
    10 c. water
    1 lb. dry lentils
    2 tsp. salt
    2 c. salsa
    29 oz. canned tomatoes, crushed
    1 lb. ground beef
    1 tsp. chili powder
    Brown ground beef with the onion, drain. Add lentils and water. Simmer 1 1/2 hours. Add remaining ingredients and simmer for 15 minutes. (can omit beef and double the lentils. Also serve over rice to stretch it further
