Meal planning frustration

Meal planning continues to be a source of frustration. I'll be glad when I have an established set of meals that I can easily shop for, and my family will eat.

    I like chicken and I have basic recipe that I use to make several dishes from and it is so easy and full of flavor. I use boneless skinless breasts or tenders and white wine, red wine vinegar, lemon pepper, and garlic. Sometimes I add chopped bell peppers and/or artichoke hearts. After it is baked I use it as a main course, or chopped for casseroles, or thin sliced for sandwiches. It has a lot of flavor, so a little goes a long way. My favorite sandwich to make with this is a wrap with lettuce and hummus. I use the small corn tortillas and make 2 for a total of 220 calories.

    I know exactly where you are coming from. I tried for years to plan meals and shopping trips, yet continued to fail horribly. I would always end up with cabinets full of food no one would eat just going to waste, while my family was living off of fast food and frozen pizza. The Nutrition Tracker on SparkPeople is a Godsend. I can change out the foods that my family does not like for something everyone will eat and then generate the grocery list. I cook more now and am less stressed when shopping. Good Luck!
