Do you eat your beets?
I never really at them all that much until this year. But they are one of the alleged "superfoods" and are chock full of goodness - folate, manganese, potassium, fiber, copper, magnesium, iron, phosphorus and all kinds of vitamins (A,B1,B2,B6,C).
