Pumpkin Roll and Cheesecake

Maybe I need to make up a poem about these 2 villans..Well do want to tell you a funny story..I am really bad about making new recipes and then sharing them before I've tested it out..I should know better at my age to make a test one first before trying to make one to take for a crowd..either that or stick with the tried and true recipes I already make great....so here is the story of the Pumpkin Roll and Pecan Pie Cheesecake...sound yummy don't they....well..................

Ok started when the SIL asked me to make a dessert (thank goodness she made a couple of cakes)...So decided to make the pecan pie cheesecake I had seen on pinterest...and since my DIL makes yummy pumpkin rolls I decided to make it as well..never made either before..but how hard can it be..well first spent an entire day making the pecan pie cheesecake..used a springform pan, put the pan of water in the bottom of the oven, cooked the pecan syrup 7 minutes instead of the called for 8-10 minutes and made the high calorie cheese cake..the kind with 3 packages of regular cream cheese, 3 eggs and whipping cream..well it came out of the oven looking and smelling heavenly...after it cooled it even came out of the springform pan looking wonderful..even made the 4 hour trip on a really curvy back road to the SIL's and was still looking great..(ending will come in a minute)...

Next day I made the pumpkin roll...I should have called the DIL to find out exactly what she does..but I did use parchment paper..problem came when I flipped that cake over onto the powdered sugar dusted towel...needed to leave the parchment paper on the bottom next to the towel and then rolled it..well later after it cooled I unrolled it and had to pry it off the towel..went ahead and iced with the cream cheese icing..(maybe it is the cream cheese recipes I need to avoid) and kind of mooshed it together..it was pitiful....so stuck it in the refrigerator to firm up..still looked awful the next day..so decided one dessert to take was plenty...so left it in the refrigerator for hubby to eat..thinking I have the will power not to eat it later..think I have the will power of a gnat....

Ok back to the cheese cake saga..Took the cheese cake out of the box at the SIL's and everyone ooohed and ahhhed over it..then went to cut it and the bottom pecan pie layer was so hard you couldn't cut it..I swear we tried every knife in the house including an electric one and couldn't cut that sucker...it was now rock candy with baked cheesecake on top..so we resorted to scraping the cheesecake off and eating it and then joked how she could take a sledge or jack hammer to the bottom part later. but happy to say the entire cheesecake part was eaten..

Now back to the pumpkin roll..After our 4 hour drive home I heard that pumpkin roll calling my name..I had done so good on eating all day and didn't stuff or overeat and kept within my calorie range but that pumpkin roll just kept calling me so decided "why not...it's Thanksgiving and I can indulge one day"...good attitude I'm thinking..well bad idea again. I wound up with the worst case of acid reflux I have had since before coming back to SP last January..wound up sleeping in my recliner half the night and now coughing today from it..think I may just have learned my lesson this time..My body sure has a way of telling on me when I feed it something it shouldn't have or over indulging..

So today I'm back to my regular routine..This next week on my 5% challenge we have to forgo junk food...think I will ace this week..none for me for some time now..I did weigh this morning and didn't gain thankfully but still no loss this week..tomorrow I will weigh again and post to my Awesome A team..don't think I'm making "last man standing" this round though..

    My mother always cooked the pecan syrup but never told me how long and I never thought to ask. Now I know.

    Know the feeling!!! I have been known as a good baker for many years but every now and then something really goes awry. Before Thanksgiving I was putting pumpkin pie into oven when noise startled me and the pumpkin filling ran over the crust, down the door and into drawer under oven. What a mess! Worst of it was the pie had been ordered by a church member as part of a fund raiser. Luckily, I had a second one made.

    Question is: Will you ever try this recipe again???

    Wow - I thought the pecan cheese cake sounded so yummy - sorry it did not turn out - I have never attempted a pumpkin roll - everyone tells me how easy they are but I am not good at pie crust or sugar cookies so do not know if I would be any good with pumpkin roll. This weeks challenge is going to be a real struggle for me!

    I can't bake to save my life, so you are WAY ahead of me. So sorry you went to all that work though, and it didn't turn out for you.

    I don't know how I will do this week with the challenge...junk food is my nemesis. I will just attack it one day at a time, or one trip into the kitchen at a time I guess.
