Falling For Fitness Challenge -Week Four Update

This week's FFF challenge is about giving up a processed food. I've been doing pretty well at avoiding packaged stuff except for the odd Lean Cuisine pasta dinner and the "fake meat" products that I eat. The Lean Cuisine dinners are my go-to when it's too late to cook anything for dinner. I usually throw the dinner in the microwave and put a quick salad together to have with it. I have to say that on the nights when I do that, I always feel like the salad is the best part of my meal. I decided to cook up a couple of batches of bean soup and freeze them to use for last minute meals. I haven't had a Lean Cuisine dinner at all this week and it's been nice to not have that "ugh" feeling after eating one. I know they're not the worst things in the world, but they're not the best either. I'm not a fan of heating plastic containers and the packaging is a bit wasteful even if it can be recycled. My new soup and salad combo does the trick without the disappointing feeling of eating a frozen dinner!
Now for the "fake meat". A lot of vegetarian meat substitutes are deceptive. They sell them at the health food store, but in reality they're a processed food. Some are better than others, but the veggie ribs that I buy are not exactly great for you. I've made my own vegan sausage before so I decided to see if I could find a vegan rib recipe. Sure enough there are some good recipes out there. Here is the one I have decided to try:
I think the cinnamon stick "bones" are hilarious! The one part of the recipe that needs work is the barbecue sauce. I'm going to go all the way and make my own. I'll post an update after I've made my "ribs"!
