Week 3 Meal Plan

Maybe this will work better if I just start adding ideas and recipes as they come to me for next week. I have 2 meals that friends gave me recipes for that I have been dying to try. So I told them I'm putting them on the meal plan for next week:

Note to self: As soon as I get enough jars make this:

Leftovers (we always have left overs from the week before and weekends are usually the time I'm most active and exhausted)

Meatless Monday (I will have to make some without ginger since I'm allergic... wonder what to replace it with, such a distinctive spice)

1 (and a half) cups chopped onions
1/4 cup minced fresh ginger
1 T. minced garlic
4 T. vegetable oil
half t. cayenne powder
1/4 t. ground cinnamon
pinch of ground cloves
1 C. millet
6 C. water
3/4 t. salt
3 C. pumpkin or winter squash cut in large cubes
1 (and 1 half) c. potatoes in large cubes
1 C. diced red bell peppers
1 C. diced tomaotes
1/4 C. peanut butter
1 10oz. pkg. cleaned spinach
1 t. fresh ground pepper

*Saute onions, ginger and garlic in the oil until soft. Add the spices and saute a few seconds more. Add millet and stir over low heat to coat the grains with the seasonings. Then add water, salt, pumpkin and potatoes. Simmer briskly. Stirring occasionally for about 30 minutes or until millet is almost tender. Add the peppers and tomatoes. Simmer 15 min. more until all veggies are tender and liquid is reduced to a light sauce. Stir in peanut butter, then add the spinach and stir over low heat just until wilted. Adjust the salt and season with pepper.

Tueday, Buttered Curry Chicken
Am going to try this recipe with chicken the first time and then see about playing with it to lower the fat, calories, make it vegan, etc. For now I'll just have a smaller portion than they recommend.
