Coconut Butter Vid & Pina Colada Smoothie

I guess I am on a roll with the smoothie recipes. Today's came about by accident, sort of. I had decided to try my hand at making coconut butter in my vitamix...not cocoa butter, but coconut butter. Have you heard of it? Until a few weeks ago, I hadn't.

It's essentially liquidized coconut meat, which I decided to try using some dried, unsweetened flakes (sweetened not only adds sugar but doesn't work well I've heard). Anyway, if you're lucky, you have a good food processor or blender or even a Vorwerk TM31;), and can try this if you're interested. If you have tried it, please let me know how it turned out for you, and how the process was.

I found it laborious. Eventually, the coconut released its oil and the mixture turns to a very thick butter (albeit not smooth). I nearly gave up. My coconut and my blender were getting hot! But I was so close, so I carried on. I just barely reached the butter stage. But I did it. Don't think I'll do it again in the vitamix. Perhaps different jars work better for this than the extra large, wide canister I was using. And, FYI, should you want to make this but haven't yet, note that the "butter" texture turns hard once it cools completely, and needs re-softened by placing jar in warm water or chiseling out of the jar ;)

In any case, I ended up with a little leftover coconut butter left in my canister, even once I'd scraped the bulk of it into a jar. So, I decided today I'd try a coconut-y smooth-y. And I remembered I had some dried pineapple. Oh MY! It was SOOOOOOOO Good. So subtle and rich. I didn't even use a banana, but I'll bet it would be wonderful. Short video attached to show texture.

Here's the lowdown:

1 Tbsp Coconut butter
OR use coconut mixed with a little water, then blend into a "milk-paste"
1.5 oz Pineapple (add toward the end if chunkiness desired)
1/2 banana (optional)
1 t Vanilla Extract
Salt - dash (Himalayan, for its extra minerals)
1 t Flax Oil
10 oz Almond Milk
10 oz Ice
