Today I decided for some reason that "productivity" should come in the form of finishing all my laundry and spending about $100 on groceries. Whee!

For breakfasts, I bought some thickly-sliced ham and made ham-and-egg cups out of it. To do that, you take a muffin pan (or if you killed your muffin pan earlier in the week, foil cups) and line the cups with the ham. I did this by cutting the slices in half (they were a little oblong) and making a slit in each one so I could sort of wrap the slice around the inside of the cup. Then you crack an egg into each cup and season as desired (I used some homemade Essence. Kick it up a notch!). Then bake until they're set. I'm planning to freeze them and take them out to eat in pairs, depending on whether the Fiance decides he likes them.

I will use ham on my salads, too!

Then I made taco meat. Again, homemade seasoning. I FINALLY found the recipe I used for my first homemade taco seasoning attempt, and I made it and realized that I didn't have the requisite 4 T of chili powder. Sad face! So I made it the best I could. I tasted the final product and have decided I need to add a little garlic salt when I reheat it tomorrow. Otherwise it tastes about right. That's waiting in the fridge for tomorrow's dinner.

Then I made roasted bone-in chicken thighs! I rubbed them down with EVOO and seasoned them simply with sea salt and black pepper. They're basically salad protein and/or whatever I decide to make them into.

Right now I'm roasting some of the mini peppers I bought, and I'll blend them up with some onions and garlic and make a sort of I-don't-know-what to put on stuff. Just an idea. I'll call it something at some point.

After all this is done I'll be roasting some red potatoes and some split chicken breasts for dinner tonight. Yum!

Win for cooking all at once!
