Quick, healthy breakfast that'll keep you full 'till lunch!

I had the joy and blessing of staying with a friend (Joyce Ainsworth) who has lost 192 pounds, mostly through following the First Place 4 Health program. Also picked up a copy of her new book: "Food, Freedom and Finish Lines" and have immersed myself in it.

Before heading out on a several-mile walk this a.m., Joyce wanted to whip up her special "Oatmeal Souffle" for me. I couldn't believe the combo of ingredients, but decided to give it a try. It was incredibly rich, sweet and tasty, and kept me full until lunchtime. Here's the recipe:

1 packet of low-sugar instant oatmeal
1 egg
a dash of Butter Buds and one of cinnamon
1/2 cup Almond Breeze (the unsweetened kind)

Beat these together in a good sized bowl and microwave on high for about 1 1/2 - 2 minutes. Remove and stir in half of a 5.3-ounce container of Oiko's Greek non-fat yogurt (plain), 1/2 cup raspberries (fresh or frozen), and a dash of artificial sweetener. Enjoy slowly, while preparing to be addicted...it has the texture and taste of a soft cobbler.

It took her less than 5 minutes from start to finish, so it's definitely good for busy mornings. If you try this, I'd love to hear your opinion, and I highly recommend her book, as well!
