I did something just now for lunch that I don't think I've ever done before.
A half hour after I finished eating my leftover stuffed pork loin & steamed veggies, I found that I was still hungry. Knowing what I would be having for dinner tonight, there wasn't much I could think of to add to my meal without throwing the rest of the day out of whack.
If I had bread, that would be empty carbs and I'd be hungry again shortly.
If I had sandwich meat or cheese, not only would my calories go up, but so would my sodium.
If I had fruit, my carbs would go up a bit, but like the bread, I'd be hungry too soon.
If I had cake (someone's b-day), all hell would break loose on carbs & fat.
Feeling dejected, I thought I'd just have to suck it up and if the day went nuts later, so be it. Then, I remembered...steamed veggies are REALLY low on calories, with "good" carbs & fiber, and I'd add no fat to the mix.
So, for I think the first time ever, I made a meal after a meal, but this time only veggies. I pulled out everything in the fridge: shredded cabbage, green onion, carrots, broccoli, yellow squash, zucchini, fresh basil & cilantro, microwave-steamed it, and topped it with some original Mrs Dash. Ahhhh...satisfaction!
Now, my tracker shows I still have room if I want something for 100 or less in the afternoon before dinner (lasagna at a friend's). And I look forward to line dancing at the gym tonight, too!
