Poor Sandwich

Monday, August 20, 2012

The sandwich doesn't get much respect. I have a friend that doesn't consider it real food. At best, she calls a sandwich a snack. Even I don't hold sandwiches in much regard. They are a second class meal I consume only when I don't have time for something better. But, thinking about it after watching today's SparkCoach video about having a list of quick meals for when time is tight, I must reconsider this.

Sandwiches are a great way to create a quick healthy meal. They are portable and easy to my make. When augmented with some fruit and carrot sticks and yogurt, it is a complete and balanced meal. My favorite is either tuna or pbj.

I like sandwiches sometimes. My favorite is smoked turkey with lite Havarti cheese on the 100 calorie round bread w/lettuce, pickles and mustard. YUM!

I didn't used to like sandwiches, so I piled them with all the bad stuff. Lately though, I've been on a roast beef or chicken salad sandwich kick. It's fast and easy and actually fills me up.

I discovered this bread that's 40 calories a slice (Nature's Own Wheat). I use 4 slices of deli thin lean roast beef at 10 calories each and a slice of 2% cheese at 50 calories and LOTS of spicy brown mustard and a couple of no sugar bread and butter pickles . That's under 180 calories I think. Sliced and served on a plate with a glass of iced tea, some low fat Activia Strawberry Yogurt with a teaspoon of wheat germ. Yummy!

Now I'm hungry .... brb *grins*

Ah a sandwich is a good meal IF what is in the sandwich is healthy. I grill pounded boneless chicken breasts, cut into 3 oz. pieces and have those for sandwiches. The chicken on an Arnold Sandwich Thin, with lettuce and tomato, with some veggies sticks, is a wonderful "meal".

Things I cook ahead for sandwiches are: chicken, baked ham, roast beef, cod fillets, roast pork. I DO NOT buy luncheon meats. Too much bacteria.

I love a sandwich from time to time- I treat it kind of like a treat tho, because of the high point value of bread (it feels high to me). It definitely becomes a nice meal when paired with fresh fruit and veggies though!

A sandwich is a complete 'My Plate" meal. Just have a glass of milk and a piece of fresh fruit and that's it for lunch or dinner. YUMMY! emoticon emoticon emoticon
