X-treme Canning??

I think I invented a new sport - and it comes with its own injury. X-treme canning.

My husband and I are canning a lot of our fresh vegetables and we had to hack back a lot of the tomato bushes which have gone haywire. To save most of the tomatoes, I had to prune a lot of branches off but I just couldn't justify throwing out 5-6 pounds of green tomatoes. So I decided to make green tomato salsa from them.

(This is where I go back to the blog title.) So, to save the tomatoes (which sounds like a new celebrity cause) I decided to can half of them as salsa.

Apparently, making salsa is a lot more difficult, and strenuous, than I thought. There was the chopping, and hauling of a giant pots of water, and climbing up ladders to reach and retrieve the jars (my husband stacked them on a table so they are about 2 feet taller than I am). Multiple sets, of course.

In the course of the ladder climb/jar reach, something in my neck/shoulder popped. And then stiffened to the point that moving is - well - not fun.

But I pushed through the pain and finished the salsa. Olympic style.

Totally weird.

    Totally understand! LOL! I would do the same thing:) what is it with not being able to throw away the tomatoes? I have that in me too. However they are a nice Christmas gift:) I use a lot of salsa around here. Now I want to go can something:) emoticon

    As a canner as well I can totally relate! I have been canning corn, pinto beans, and red beans lately! Long pressure cook time! Had to take a break as its been 100 plus all week! Good luck!
