If I can cook a vegetarian meal than no one has any excuses!

Yesterday I cooked a wonderful meal for my Honey. Yes, married a month and this is the first time I've cooked LOL. But that means if i can make something delicious and easy so can you! I made up my own recipe.
I started out with whole grain linguine pasta, then added, a tad of olive oil and I can't believe its not butter Mediterranean flavour, garlic powder-or fresh garlic, shredded Parmesan cheese, some Mrs.Dash italian flavour seasoning, and our meat replacement...Gardein chick n scallopini breasts. i browned these in a pan with just enough olive oil, then cut up and mixed all the ingredients in a bowl. i can give you the exact nutrition info if you like just ask me, but basically, its a hearty portion for only around 400 calories and is 100% vegetarian.

That pic is of one serving...that's 2 oz of linguine, a whole can of no salt added asparagus ( i used canned so there would be a little juice to make a light sauce with the garlic, oil and butter spray) 1 gardein breast cut up, and topped it with 4 tbs of shredded Parmesan cheese.
This is definitely one dish i'll be making again and again. And just the gardein breast alone had 14g of protein....how awesome is that! So now there is no excuse to say you can't cook vegetarian...I never cook and when I do it's very easy convenient foods , still healthy but not a dish like this.
And the Hubby, he loved it! Said it was something he definitely wanted to have again and that he was so proud I actually cooked for him :)
