pecan puffs

from a wonderful lady in lafayette, LA. Today is her birthday so I am making her recipe in her honor.

1 egg white
1/4 tsp salt
1/4 tsp baking soda
1 cup light brown sugar
3 cups pecans

Method (her words): In a mixing bowl beat egg white until stiff. Add salt, soda and sugar. Mix very well. Coat pecans with this mixture. Spoon 2 to 3 pecans at a time on a slightly greased cookie sheet. Bake at 300F for about 30 minutes or until light brown. Let stand and cool for awhile before removing from cookie sheet. When cooled, store in an airtight cookie jar or pan. These may be frozen, but you'll eat them before you will be able to freeze them. YLield About 3 dozen cookies
