My weird but delicious lunch w/ pic

In an attempt to eat more veggies, I sauteed some zucchini & mushrooms in coconut oil & seasoned them with salt, pepper, garlic, oregano & basil. I threw in a little parmesan & left over skinless boneless chicken breast. And just for fun, I threw in & heated through a few tablespoons of some black bean & corn salsa just for color & nutrients. It looked pretty and tasted better than I thought. I was a little worried because the salsa was in a vinegar & oil base.

I love having time to cook healthier in the summer.

    I ***LOVE*** coconut oil. I've read a lot on mercola.com about the advantages of coconut oil. It's a natural anti-fungal, anti-viral, anti-bacterial among other things so I love to put a drop or two in my tea when I have a sore throat. It's got healthier fats too. And it gives things a slightly tropical taste. Yum! It's supposed to help in weight loss too, but really? Can any fat HELP you lose weight? Eh. Dunno.
