Wild Salmon Salad Lettuce Wraps

A friend shared this recipe with me a few weeks ago. It is sooooooo delicious I had to share it with the lot of you too.

I have no idea what the nutritional information is, but by the looks of it, it's only high in what's good for you.

7.5 oz can wild salmon (it's best to get the kind with bones for the calcium, but not necessary)
1/4 cup fresh-squeezed lemon or lime juice
1/4 cup diced carrot
1/4 cup diced celery
2 - 3 scallions, chopped in thin rings
2 tablespoons minced herbs, such as basil, parsley or cilantro
Sea-salt and freshly ground pepper to taste
8 large lettuce leaves

Optional ingredients to include in your wrap:
Hot Sauce

In a largish bowl, mix the salmon well using the back of a fork. Add the lemon juice, carrots, celery, scallions and herbs. Mix thoroughly. Place a heaping tablespoon on a lettuce leaf alone or with any or all of the optional ingredients. Wrap as you would a burrito and enjoy.
