Chickpea and Tomato Salad w/Fresh Basil

I made this delightful salad last Thursday to serve as a side for a dinner my boyfriend and I were preparing for his family. It can be eaten as a main dish (two servings) or as a side dish (probably four to six).
The dressing is sweet and tangy, thanks to the vinegar and honey. Use fresh garlic for a nice bit of spiciness. If you're not a fan of garlic, I recommend cutting back to one clove or omitting it entirely.
These were the prices I paid for the ingredients at Kroger today:
- One 0.66 oz package of organic basil ($2)
- One 15-oz can chickpeas ($0.89)
- One pint of grape tomatoes ($2.50)
- Garlic, vinegar, olive oil, honey, and salt ($0.50 total?!)
Total Cost: $5.89
You can get basil for much cheaper than that if you buy a larger container (I found a 2-oz tub for $4) or grow your own. Dried chickpeas are also much cheaper than canned, but they are not as convenient.
