The Chair exercise team has a challenge going on eating our veggies! Now I love veggies so this one is easy for me. I love asparagus, roasted with a little olive oil and garlic. YUM! I also love Broccoli steamed with a splash of pepper and some onion. Red, green and yellow Peppers in a stir fry. bring them on.
Add some onions and garlic too. I think I eat onions and garlic on everything. And veggies make the best soups. Cabbage, celery, tomatoes and onions make wonderful soups. I keep it on hand all the time. I just add anything else I have that needs to be used up. And we always have a big bowl of salad ready to eat. In my salad I put, different kinds of lettuce, cauliflower, broccoli, celery, carrots, radishes, green onions, red peppers, mushrooms, zucchini, and sometimes avocado on top. When serving I add tomatoes and cucumbers. It is very tasty.
We were asked to share a recipe that uses veggies so here is mine to share. I found it on the Weight Watcher recipe review board a few years back and it is excellent.

Combine cheese, oregano, pepper and garlic in a bowl.
Arrange half of the eggplant slices in an 8-inch square pan coated with cooking spray. Arrange half of the tomato slices over eggplant. Top with half of the zucchini slices; sprinkle with half of the cheese mixture. Repeat the layers with remaining eggplant, tomatoes, zucchini and cheese mixture.
