Can you eat to many veggies?

The Chair exercise team has a challenge going on eating our veggies! Now I love veggies so this one is easy for me. I love asparagus, roasted with a little olive oil and garlic. YUM! I also love Broccoli steamed with a splash of pepper and some onion. Red, green and yellow Peppers in a stir fry. bring them on. emoticon emoticon emoticon Add some onions and garlic too. I think I eat onions and garlic on everything. And veggies make the best soups. Cabbage, celery, tomatoes and onions make wonderful soups. I keep it on hand all the time. I just add anything else I have that needs to be used up. And we always have a big bowl of salad ready to eat. In my salad I put, different kinds of lettuce, cauliflower, broccoli, celery, carrots, radishes, green onions, red peppers, mushrooms, zucchini, and sometimes avocado on top. When serving I add tomatoes and cucumbers. It is very tasty.

We were asked to share a recipe that uses veggies so here is mine to share. I found it on the Weight Watcher recipe review board a few years back and it is excellent.

emoticon Eggplant and Tomato Gratin emoticon

Serves 4

1 pound eggplant, thinly sliced
1/4 teaspoon salt
1/2 cup Parmesan Cheese
2 teaspoons fresh oregano
1/4 teaspoon black pepper
4 cloves garlic, minced
6 small tomatoes, thinly sliced
2 medium zucchini, thinly sliced

Preheat oven 375F

Arrange eggplant slices in a single layer on baking sheet coated with *cooking spray. Coat slices with cooking spray also and sprinkle with salt. Bake for 16 minutes, turning eggplant over after 8 minutes.

Combine cheese, oregano, pepper and garlic in a bowl.

Arrange half of the eggplant slices in an 8-inch square pan coated with cooking spray. Arrange half of the tomato slices over eggplant. Top with half of the zucchini slices; sprinkle with half of the cheese mixture. Repeat the layers with remaining eggplant, tomatoes, zucchini and cheese mixture.

Bake covered for 1 hour; uncover and bake an additional 10 minutes or until veggies are tender and cheese is golden brown.

127 Calories; 4g. Fat; 8g. Protein; 18g. Carbohydrate; 6g. Dietary Fiber; 8mg. Cholesterol; 342mg. Sodium;

Also good with mushrooms in it.
* I use a little dab of olive oil instead of cooking spray. Add calories for it if you do it.

Now as much as I like my veggies I like emoticon emoticon emoticon emoticon emoticon emoticon
even better, So eat those fruits and veggies and enjoy getting healthy! Nothing tastes better than fresh from the garden fruit and veggies.

    Gail, thanks for the great sounding recipe. I'll have to try it. I love most all veggies. I've never cooked eggplant, but I do enjoy eating it whenever I go to a cafeteria style restaurant. Since veggies are so good for you, I don't think you can eat too many. Hope you have a great day!

    It IS really good...........I have made it in the past, just didn't tell my DH at the time what it was, LOL! He thought it had meat in it.............NOT! Good for a veggie main dish! And NO, don't think you CAN eat too many vegetables.........

    Recipe looks yummy, Gail! If I made it I'd have to eat it all myself (not such a bad thing, I guess), as Richard won't touch Eggplant! There are a few other things he doesn't like that I have anyway, but they're easy to fix in smaller quantities. Like you, I'm a huge fan of veggies! Love, Jeannie

    I know how you love your veggies and it's great because they are so good for you. The recipe sounds interesting but don't honestly know what eggplant tastes like? I don't think anyone can ever eat too many veggies but maybe a Dr. would say, "I'm out to Lunch". Keep eating your veggies and you'll be in Onderland soon.
