4. Have a vegan day today. No meat, no eggs, no dairy, no animal products whatsoever. Give it a try!

So today was supposed to be my vegan day...except that I forgot until after breakfast. Arg. I wasn't feeling too bad about my 1 little cheese wedge, but then I remembered that a bagel wouldn't be vegan either. *sigh* I did complete this challenge for the rest of the day though!

1C reduced sugar OJ
1 multi-grain bagel
1 Tbsp peanut butter
1 wedge Laughing Cow Light Cheese

2C spring greens
1/2C cucumber
1/2C orange bell pepper
2Tbsp homemade balsamic vinaigrette
1/3C trail mix

Snack: Banana

1/2C brown rice
1/2 block extra firm tofu marinated in BBQ sauce
1 small onion
1 carrot
1.5 heads of broccoli
1/2 orange bell pepper
1 clove of wild garlic
1tsp reduced sodium soya sauce
2.5Tbsp vegetable oil (for the stirfrying bc it took so long; this put me over my daily fats)

I was in the zone on daily calories, carbs, protein (in what Sparkpeople suggests, but lower than I've calculated it should be), sodium, cholesterol.
I went over on fats bc of the veggie oil.
I was under on iron (as usual), calcium & fibre.

I've felt comfortably full all day (though I'm stuffed after the late supper) and was able to do a 10min cardio (some weird machine), 45min BodyJam class, 35min of weights (machine & free), plus the 18min each way walking commute no problem! I was definitely a gross & sweaty beast by the time I started to walk home, but I felt wonderful! :D I always forget how much I love to sweat bc I don't like doing it so much on my own. Classes are so wonderful for that!

I didn't feel particularly challenged by having to eat vegan, maybe because I eat a lot of vegetarian meals & have vegan friends. I'm happy to go back to meat tomorrow though because I have an awful lot of rotisserie chicken that needs to be devoured before it goes bad! I might make a chicken lasagna to ensure none of it goes to waste. I can't wait to take a bite. Mmm...
