My best veggie recipe

Below is my best veggie recipe. It is actually not "mine", but one I found on SparkPeople when looking for holiday menus for company. On my own, I usually steam veggies and perhaps add a bit of butter, or stir fry them in olive oil.

But I do love sweet potatoes, fixed any way. The one below makes a nice not too sweet dish. The directions call for cooking it in the microwave in a plastic bag. I put it in a glass casserole and microwaved it as directed, then into the refrigerator overnight. On Easter, I heated it in the oven. I also added some pecans scattered here and there. For my DH and because it was a holiday, I also scattered a few mini marshmallows on top for the last few minutes, but would not ordinarily do this. It would taste very good just the way the recipe is written. We had 14 people here for dinner, but I just doubled the recipe because we had numerous other dishes. This one was well received.

Sweet Potatoes with Apples & Cranberries

Number of Servings: 4

Ingredients

2 medium to large sweet potatoes (about 1 to 1 1/4 lbs total), peeled and cut into bite size pieces
1 medium Granny Smith apple, cored and diced into small (3/4 to 1 inch) pieces
2 Tablespoons dried cranberries
1 1/2 Tablespoons butter
1 rounded Tablespoon brown sugar
3/4 teaspoon salt
1/2 teaspoon cinnamon

Directions

# Seal bag and shake gently to combine ingredients. Pat ingredients into single layer. Place bag in microwave.
# Cook on full power for 9 minutes (Medium bag) or 8 minutes (Large bag), or until sweet potatoes are tender. If needed, continue microwaving at 30-second intervals until sweet potatoes are tender.
# Allow bag to stand for 1 minute before handling. Shake gently to distribute ingredients. Carefully open bag and serve.
