Had the abdominal u/s this morning, which I had to fast for. I was ok with that though mostly thirsty. And mostly I worried about putting my thyroid med off schedule. The technician did a great job and even let me watch, which was kind of fun, if you like looking at vague outlines of liver and kidneys. Ultrasounds are much clearer than they used to be.
Had quite a list of things I needed to do afterwards, but Ron was exhausted. I'm not sure why as he'd gone to bed long before I did, last night. He just seemed too tired to tackle everything and I figured that might spare me more in the way of stress fractures. I do have all that padded insert but the arch supports are a bit softer than I need, so I know I'm still at risk.
Went to Henry's Farmer's Market with a list of three things, which ballooned into a cartful of chicken sausages, organic kale, organic swiss chard, red bell peppers, Shaiitaki mushrooms, organic apples, Shirataki noodles, eggs, onions, avocados, and Canadian Atlantic salmon. Probably a few other things, too.
Ran by the drug store to pick up refills. It's been days but some were not called in so at least I got the thyroid med, which was the most critical.
Theoretically, if my legs are not too sore, I can go and pick up some more tomato plants and pots tomorrow, which is the bottom of my list. Not sure if I can do that or not. I'm pretty sore, again, and have shin lumps. Ugh.
I did make a fantastic supper tonight. I cut up half a pound of organic, nitrate free bacon up in small bits, and sauteed them until brown. Drained well and drained the pain, then sauteed an onion, a red pepper, and the stems of the kale and chard, and added garlic and the mushrooms. Cooked that down a bit and then added the leaves, some hot pepper flakes, a dash of Aminos, some no salt seasoning. Preheated the oven to 350. Turned off the heat and stirred in a cup of fat free ricotta cheese. Poured that into a small cassarole pan sprayed with Pam. Put half a cup of mozzarella on top, then sprinkled on some pine nuts. Let that bake for 20 minutes then turn on the broiler until it's brown on top. Delicious! Sort of a fat free adaption and souping up of an old Alton Brown recipe for greens. It took time to chop and sautee everything but in between I got some laundry done.
How many calories? I have no clue.*** (Came in around 300 calories for a third of that). Boy... No I did not measure everything. I do know most of it though. I'll try to track it.
Had a blast with the Glee episode. I recorded it and we watched that tonight. Saturday Night Fever theme and boy did my bf have fun singing and dancing around the bedroom. Disco Night! I did my share of dancing, too, from the bed, since my legs are still sore. Fun night tonight! At least until he goes to bed.
