Raw Apple Pie Dessert

When making the decision to transition from the S.A.D to a raw foods lifestyle, what initially caused the most angst was the thought of having to give up desserts. I love desserts. I prefer to eat dessert as the main course, and then eat the rest of the food! As an avid baker, there is always something sweet to eat in my house.

After cleaning the pantry and fridge to get rid of the foods that I choose not to eat anymore, i.e. junk foods, white rice, white flour, butter, sugar, etc., I panicked since these included my baking essentials. I thought surely that I am setting myself up for failure, as there was no way I would stick to a lifestyle that did not include the occasional dessert.

Lo and behold and thanks to copious research, I stumbled across a plethora of websites, food preparation books, video blogs, information on SparkPeople, etc., which showcase raw desserts! Talk about being blown away by the creativity exhibited when making tasty sweet morsels out of the bounty of raw food!

Therefore, for Easter, I decided to take a stab at making my first raw dessert. I chose the Apple Pie recipe as it was the least intimidating and did not require dehydration. Below are the recipe and the picture of my pie!

Apple Pie

4 servings

1 ¾ c almonds
1 TBSP almond oil
5 fresh dates
Pinch of nutmeg
2 tsp cinnamon
Pinch of salt
1 TBSP honey or agave nectar
1 tsp vanilla extract

1 or 2 apples
1 banana
2 dates
1 tsp cinnamon
Pinch of nutmeg
1 vanilla bean
½ half lemon- divided

2 or 3 apples sliced
Cinnamon and nutmeg to taste
Remainder of lemon juice

Finely chop the nuts in a food processor. Add to the nuts the oil, dates, spices, and salt. Mix. Add the sweetener and pulse to form dough. Spread the dough out on the bottom of a pie dish. Slice open and scrape the vanilla bean. Add to the food processor along with the other filling ingredients. Sprinkle filling with ¼ of the lemon juice. Blend thoroughly. Spread filling on top of the dough. Garnish by fanning the apple slices tossed with lemon juice on top of the filling. Sprinkle the cinnamon and nutmeg on top.
