Gluten-Free Week Day 6 (of 7)

I'm sad that my GF blogs are almost over... they have been a lot more help than I realized they would be. I will still be continuing the GF lifestyle after this week though... it is definitely necessary for me!
Today I ate...
Breakfast: 2 hard-boiled eggs and 2 small (3" dia) gluten-free blueberry pancakes with ground flax and chia seeds mixed in, 1 pat butter and 1 tbsp syrup, 1 cup soymilk.
Lunch: blackberries and 1/2 grapefruit, chunk light tuna can w/ mayo and mustard, 1 serving gluten-free crackers.
Snack#1: homemade chicken satay with cucumber relish and peanut sauce
Snack#2: babaganoush with mixed veggies (carrot, celery, cucumber, and green pepper), 12 oz mango-peach flavored coconut water.
Dinner: bison burger on mixed greens with avocado, mustard, tomato. Roasted buttercream potatoes and olive oil, 1 tbsp ketchup.
Aquatic workout: 30 min deep water running w/ flotation belt
30 min aquatic strength training (arms, back, chest)
20 min misc swimming
