Breakfast report

The quinoa, coconut Greek yogurt and pineapple breakfast was .. well, not delicious, but it was good, something I could eat again and try in different ways. The next thing on my list to try that I've never had before is kefir.

    I love quinoa. I use it place of rice, well, most grains for that matter. I really have to pay attention to the glycemic index of foods. The high protein in quinoa makes it a great option for me. If you are willing, I would suggest trying it in other ways. As a side dish, in place of rice with stir fry, etc. I've made it using broth instead of water and then adding some veggies for a 'pilaf' type of side dish. Ive also had it a cold salad made with chick peas, cheese, cilantro and a few other yummy things. I've never had Kefir. Kale is on my list of things to "try."
