Today has been a long day. It's almost 8 p.m. CST and I am just sitting down for dinner. My stomach is growling!! I'm making a modified version of Hungry Girl's Lasagna. GOOD stuff! I made it last night, too. But last night I made it as directed (ok, no eggplant) and today I played with it. Since I don't like eggplant I substituted fresh spinach and a 1/2 c of meat both times. Last night I used ground sirloin and tonight I used sliced chicken breast. I'm so glad that I cook meat in batches. That way I can toss together a meal like this in no time. 5 mins of prep, 22 mins of cooking. Viola! DINNER withing my goals and very satisfying.
So my tip today is cook meats ahead of time and portion it out in freezer zipper bags. Then you can easily grab the right amount, it thaws fast and can be added to a salad or stir fry or quick healthy casserole. YUM!!
