Well, I tried this pizza on Saturday night. The crust is so simple.
1 cup flax meal (ground flax seed)
1/2 cup grated parmesan cheese
mix flax and cheese together. add eggs and mix well. let rest for 5 minutes. press out into 10 inch pizza pie plate. wet hands while doing this so dough doesn't stick to hands. if it doesn't stretch out to whole pan, it will be too thick.
cook at 350 degrees for 15 minutes. remove from oven and add chosen toppings. bake again for another 15 minutes. broil for 5 minutes or so to brown cheese.
now, i think it needs a little more oomph. i don't know, but, i am going to try adding a few different spices next time. but, for my first time trying it, i give it a 9.5 out of 10. you can eat it with your hands. it's solid, crispy and very satisfying.
for topping, i added pizza sauce (check labels, there was only one that was low carb enough at my store), chicken, shrimp, tomatoes, mushrooms, yellow bell peppers, onions, black olives, hot pepper rings, fresh basil, fresh oregano, provolone and mozzarella cheese.
AMAZING AND EASY!
