Holiday Soup (crock pot)

1 cup of dried nine bean soup mix
1 qt. water
1 ham hock (I used a turkey ham)
1/2 c diced onions
1 12 oz. can diced tomatoes (I had crushed)
1/2 Tbs. Chili poweder
1 Tbs lemon juice
1/4 tsp black pepper
1/2 tsp salt*
*more or less depending on taste

Wash beans, place into a plastic container, cover with 2" of water and let soak in the refridgerator overnight.


In a heavy pot or a crock pot put the beans, 1 qt water and all the other ingredients. (I put the lemon juice in right before I served)

Simmer 3-5 hours

Remove ham hock, take the meat off the bone and add back to soup.

I served with bread for hubby. Put cheese in hubby's. Added cottage cheese in mine.
