A New FAVE Mid-Morning Snack!

Just had to share this because I love it so.
Basically, on Sunday, when I prep everything, I get about 2 cups of berries (frozen unsweetened mixed berries, OR fresh blueberries and strawberries... whatever I happen to have) and throw them in a pot and cook them down with a spoonful or 2 of stevia, about a quarter cup of unsweetened flaked coconut, and a spoonfull of vanilla extract. Then after it cooks down and gets all gooey I just dump it into a storage container and put it in the fridge.
Then it's ready whenever I want to put some on top of my yogurt! I usually just buy the HUGE tubs of FAGE plain fat free greek (greek is key) yogurt then portion it out. I just spoon some of the berry topping in the cup with the yogurt, add some cinnamon, a tsp of crunchy natural almond butter, and a Tbsp of ground flaxseed. YUMMY! and keeps me full til lunch since I take a late lunch and don't end up eating til like... 2:30 or 3. Best thing ever.
