20-40 Garlic Chicken in the crock pot

Tuesday, February 07, 2012

3 to 4 pounds of chicken (I used 3 leg/thigh quarters)
20-40 cloves of garlic
1 Tsp salt
1 Tsp pepper
1 TBs paprika
1 tbs olive oil
1-2 onions sliced

Place sliced onions in the bottom of the crock pot. In a large bowl toss all the other ingredients together then place on top of onions. No other liquid needed. Cook on low for 6-8 hours. The longer it gets the more tender it is.

I think it needed a little more salt.

I served with greenbeans and stuffing.

I had to come back and tell you that this one is definitely a repeat in my house! I used boneless skinless chicken thighs, and probably less than 20 cloves of garlic (it was getting late), smoked paprika instead of regular paprika, and kosher salt instead of regular salt. It turned out great, but hubby and I thought it needed a little heat, so I might add a bit of hot sauce next time. I also served green beans on the side, and it was the perfect complement. Thank you for sharing this!
