3 Weeks Gluten Free and Counting

Today marks 3 whole weeks totally Gluten Free. I am so happy that my cravings are starting to diminish dramatically and I find myself not really just foaming at the mouth when I see bread and cookies now. Last night I stumbled across a website that I had forgotten about! = www.glutenfreegirl.com
What a beautiful way of writing she has! And the pictures.... NOM NOM!!! I am definitely going to be picking up some baking ingredients this weekend!
My husband told me last night that he is on board with getting ALL of the glutenous things in the house. I can't imagine how wonderful it is going to be to open any cabinet and be free to grab ANYTHING in there. Or to reach for ingredients and not to have to make sure I grab the right tub of flour or the right soy sauce. I'm really looking forward to doing some chunking on Saturday morning.
This morning I enjoyed an indulgent breakfast - a BIG one! Potatoes and Bacon and my usual Greek yogurt, granola and coffee. YUM! I just felt like having a treat, so I figured I'd make it breakfast and plan accordingly for the rest of the day.
Today my goals are to stay around 13 - 1400 calories, do my Ripped in 30 video, and just stay positive today at work. :-) OH! And to get some of my grad school work done!
