OMG...breakfast has become my new BFF!

I LOVE TO COOK! I especially like to share my yummy ideas. You all have to try this one for breakfast tomorrow.

6 eggs
1 cup cooked fresh spinach
1/2 cup chopped green bell peppers
1/2 cup chopped red onion
1/2 cup chopped red tomato
1/2 cup baby bell mushrooms
2 tsp. extra vigin olive oil
1/8 cup fat free feta cheese

in a small frying pan cook 2 tsp. olive oil, peppers, onions and mushrooms (to soften them up).
in a large frying pain scramble 6 eggs. then add all other ingredients cooking for 5 mins. top with feta cheese and pepper to taste. Enjoy this ohhh so yummy protein rich breakfast.

    I do a similar thing...but only use one pan....saute the veg and then pour the whipped up eggs over the top and put it in the oven for 15 minutes....DELISH!!!! Frittata by any other name...
