Question: whats next?

OK, I have been on the same plateau for a long time. I started to track my food to see if I am in my range of 1200-1550. check. I started to weight train 3 days a week . (on week 2). I have a job that i am on my feet 8 hours a day. ( ped. says i walk 1-5 mi a day). cardio dvd 3 days wk at 20-30 min. My question is what to change? eating or exercise? watch what carbs i eat?
