Paleo - Week 2

Again, because we are necessarily making the big batches of food, and we don't spend the day at home eating the lunches and having the snacks together, I'm moving more slowly through the Everyday Paleo 30 day menu. Actually, it's working great, as we really do love the leftovers, and it turns out that this is WAY cheaper and tastier than restaurants. Despite the fact that I've committed to grass-fed--and where possible--grass-finished beef.

Signed up with greenbeandelivery to try to get as much local food as possible. Bought 3 pounds of grass-finished beef from a farmer just a county away via this service, along with a lot of produce. The trick's going to be figuring out how to use it all up in a cost-effective manner.

Recipe reviews:

Frittata for All -- This was tasty and fun, being sliced like a pie. ONE CAVEAT. It starts off on the stovetop in a round large skillet, but is meant to then be moved, skillet and all, into the oven to broil. My large skillet has a non-metal handle, and I didn't want to take a chance on broiling that material. My workaround: do the dish from start to finish in my cast iron dutch oven. Stovetop on the long burner, then up close as I could to the broiler. That was not ideal. I would use a bit less oregano next time. It floats to the top, and it's quite strong. The child picked up on that. She still liked and ate it, but would have eaten more if less oregano.

Hasta La Vista Pasta Lasagna -- Savannah ate zucchini! The use of thin slices of zucchini as the "pasta" really works! Great re-heat all week. Next time, I would freeze half, or figure out how to halve the recipe. It was a lot of food. ALSO, suggest that one make half of it with black olives and leave half off if child refuses black olives, as mine does. I marked the olive half with a few olives sprinkled on top of that side.

Garden Fresh Meatballs -- a total hit. They taste meaty, but they are stuffed with the good stuff: yams, spinach, zucchini. Very tasty and GREAT for lunches cold or warmed up in the microwave. I have learned about eating 5 days of leftovers, and froze half of them immediately for the future instead. I'm starting to build a respectable collection in my deep freezer of great paleo meals.

Bean-less chili -- ALSO a big hit with Savannah. I used leftover turkey meat from the above recipe to round out the ground beef required for this recipe. Was able to get hot Italian sausage from that same farmer (1 LB ground, not in a casing) to get this recipe done. Very nice! Very easy. These recipes DO take a lot of spices, but very worth it.

Tomorrow morning, it's Karina's sausage hash again! Sending her off well-fortified.

Another huge repeat hit is the "easy spinach salad" of bacon, spinach, hard-boiled egg with lemon juice and olive oil. Well, Savannah likes it without ANY dressing. But I've discovered I really like salad! It was those gooey salad dressings I hated! Who knew?

She is off to her dad's mother's in Buffalo, NY, so I must shift for myself the next two days... I think maybe I'll scour my freezer for older things she definitely won't eat and eat those things up.

    I DID buy a 14 cup Cuisinart because of this project. I was able to look over a lifetime of long, long shredding events where a food processor would have been lovely. I have been loving it this last month. It's coming in handy in ways I'd not realized it would.

    Your comments are a definite encouragement to me! My hubby went out of town for about three weeks yesterday, so I spent most of the day stocking up on groceries to start "hardcore" paleo today. This morning I attempted making some egg muffins (but posted on your wall already about those)... and I'm not sure what's on tap for lunch. I do know that I'm putting a larger food processor on my wish list, I have a tiny one...and it's super hard to do all the stuff she wants me to for that egg muffin! I look forward to more reading :D
