The Lentil Saga Continues

It's been way too long since I've blogged about a challange recipe. I'll keep this a food blog and not dwell on reasons, but I've decided this challenge needs more of my attention and my goal is to hit double digits before the anniversary of starting this challenge (sadly not the first anniversary, but I'll finish this thing eventually).

I have a few recipes to write about, but I keep leaving the pictures I took of the first one on my work computer (long story why they're there in the first place). So I'll get to that one when I can, but will go into a couple others.

Today's theme is back to the humble lentil (I know, I really can't stay away).

The first comes from Appetite for Reduction and are the Chipolte Lentil Burgers...or as the version I made is called - since my grocery store is competely lacking in all things Chipolte - Lentil Burgers. Right in the little intro blurb, she says that you need to follow this recipe to the letter in order to get the consistency and texture right. So I'm going to say right up front, that anything I'm about to complain about (spoiler alert) shouldn't be held against this recipe. If I had chipoltes in adobe sauce, then maybe things would be a little different...as it was, I didn't, and although I tried to make up for them by adding in more onion and some mushrooms, it obviously was not enough, and I'll give Isa the benefit of the doubt and assume these would've worked out great otherwise. In the end, this recipe made about 15 burgers - well over double what the recipe states (6 burgers). Initially, I followed the recipe and divided it into 6 equal "burgers" (aka huge mounds of sticky, near-runny lentil mush). The first 3 in the pan were a disaster - they wouldn't hold shape, wouldn't stiffen or even brown, and when I tried to turn them, they'd just mush into themselves. For the 2nd batch, I got smarter. I made small little burgers (aka burger sized mounds of sticky, near-runny lentil mush), and these at least held enough that I could flip them. They still fell apart when picked up, but at least they held a somewhat burger-like shape long enough to take a picture and pretend these turned out well. I will say they tasted pretty great though. I definitely enjoyed eating these and the recipe was relatively straight forward and made a ton of them! The day I come across some chipolte with adobe sauce will be the day I try this recipe again.

The second recipe is also from Appetite for Reduction and is Mom's Marinara. This all stemmed from the leftover lentils I had from the Lentil Burgers. I had a cup left...the Lentil Bolognese called for one cup of lentils. It was fate. So I grabbed a spaghetti squash, some canned tomatoes and off I went. I used a few of the variations listed (there are 3 pages of possibilities!). So in actuality I made Mom's Spicy Mushroom Lentil Marinara. I'll refer back to my mistep from the Lentil Burgers for a second and say that I made a few substitutions that in hindsight, I shouldn't have made. First of all, the recipe calls for crushed tomatoes...I decided to get diced instead...I like my marinara chunky and thought there wouldn't be any issues...there were. Secondly, the lentil bolognese variation calls for red lentils, which I know tend to break down and create a thicker almost meatier texture. The leftover lentils I had were brown, so I used them instead. The result of these two decisions was that the sauce never thickened - in fact, it was kind of like runny tomato water with lots of chunks of tomatoes, mushrooms and lentils. But again...my fault on that, so no judgement on texture. The taste however, was amazing! A perfect simple marinara sauce with a bit of kick to it from the red pepper flakes. Definitely will be making this again, but might actually listen to the recipe this time.

Ratings

Chipolte Lentil Burgers: This will be replacing Everyday Chipolte-Vegetable Tamales from Veganomicon. I think I'll give these another try when I finally find those chipoltes. The flavours were really good, but if the texture is the same next time, I wouldn't make these again - way too much frustration in the cooking process! 4 out of 5 mullet men.

Mom's Spicy Mushroom Lentil Marinara: This will be replacing Whole Wheat Soda Bread w/ Millet & currants in Veganomicon. Flavours were outstanding and texture issues were all me. My go-to make-in-20-minutes marinara sauce from now on. 5 out of 5 mullet men.
