Update!

Today I did not exercise (reason below)
Today I will make healthy choices!
Today is going to be fantastic!

Oh my, where has the time gone! It has been super crazy. We still have the November 15 deadline (odd year ends for entities, non-profits, and the texas franchise tax returns), so I have still been way busy at work! And then there was the sickness. I loathe being sick. This was even worse, it hung on (still slightly have it) for over 2 weeks. Darn cold.

Which is why I am still letting my body rest. I went to bed at 9 last night and did not wake until 6am when the alarm went off. I had a deal with myself, if I wake up early (I normally sleep between 7 and 8 hours on norm) then I will exercise, if not, my body still needs the rest. I am hoping tomorrow.

I am still on the right track eating wise though! I have noticed so much has changed. I am making concious decisions, like, I know I had those extra calories in the am, so tonight, even if I am like, ohhh a nice piece of chocolate sounds good, I stop and don't have it. Also, the drinks at night are being limited to one with dinner. Which helps out on the calorie counts!

Mom and I canned all weekend. Not even kidding about that. Well, we did get the grocery shopping and some other random shopping done on Saturday, then came home, cleaned up the kitchen and the house, then made a few batches of apple sauce. Then on Sunday we got up and got to it! We were in the kitchen all day, barely sitting down. In fact, on Saturday, the tv did not even get turned on! On Sunday we did sit down at the end of the night (for about 1 hour) to watch a show, but that was it! Pretty amazing feeling! We still have more canning to do and have been canning/ making stuff all week! Which again, from someone who used to come home from work, make dinner, eat dinner, clean up, and sit on butt for the rest of the evening, this is pretty major stuff! But also means I have not nearly so much time for Spark, but it is for a good reason!

So the list of canned goods we made:
4 batches apple sauce (recipe below)
2 batches apple butter (second one will be done tonight)
5 batches apple juice (to be made into apple jelly or for smoothies)
2 batches caramel apple jam
1 huge pot of tomato sauce to be used later to either have soup (Yummm) or spaghetti sauce!

We are still planning on canning a few batches of apples to use later for an apple pie and will also probably make more apple sauce. And another batch of the caramel apple jam.

One of our friends provided us with this recipe, it is super tasty and quick and nutritious and delicious!

Homemade Apple Sauce
8 medium apples (mixed varieties (we used granny smith, gala, and fuji as that is what we had))
5 tsps sugar (I prefer using brown sugar for depth of flavor)
1 3 inch cinnamon stick (omit if you do not want cinnamon flavor, but using the stick, it is very lightly scented with cinnamon!)
dash of salt

Peel and core the apples, place in crock pot (yep you read that right), add the sugar, cinnamon stick, and salt. The recipe did not call for the skin, but I put it in anyway, since I wanted the extra nutrition in there. It is up to you. We used our apple peeler/corer and it made this process super speedy! Cook for 6-8 hours. Blend or use emersion blender or not if you want it chunky! Refrigerate for up to 2 weeks. OR if you want to, can it. We use the water bath method, heat up jars (after they have been washed) in water bath, be heating the lids in another water bath, remove jars from boiling water, fill the hot jars with hot apple sauce, place lids on jars, make sure tight, return to boiling water bath for 15 minutes. Enjoy over the next year!

This is a great way to use up extra apples that you have!

Now that I am finally feeling better, I should be on here a bit more again! That cold really wiped me out. I think I was sleeping on average 10-12 hours a night and then going to work. I never really ran a fever, just was exhausted, but that is gone now!

If I have not caught up with all my friends out there, sorry, I have been trying! One day at a time! Hope everything is going well and that you are all enjoying the start of the cold weather! I am so happy it is no longer 90-100 degress outside!

    You are one busy girl! I love canning - but it sure is time consuming. Do you have apple trees or do you go to an orchard? We had 1 apple tree but it got hit heavily last winter with the ice storm and died this year. emoticon

    We like to can green beans ( deer & rabbits ate them this year!) and salsa (didn't get enough tomatoes) and pickles. I did a lot of pickles this year!

    Happy weekend....I'm so glad you're feeling better! It sounds like you're having some amazing adventures in canning...I've never done it myself, but would love to try it! I hope that things slow down for you at work soon...it sounds like you've had a VERY busy season over there and work really hard!
