Enjoying my new eating plan (JE 12 week challenge)

I have been wanting to start the JE 12 week challenge since it came out. Well I didn't start until this week. I won't go into all the reasons why i didn't start before....boring!
I skipped forward to the 2nd stage because I wanted to continue doing cardio. I pleased to say the workouts have recharged my batteries and I'm feeling good about my work outs again.
News Flash******I didn't think the eating plan was that far off from what I was currently doing. I stand CORRECTED!!!
Though I was eating clean all meals but dinner and the occasional after dinner treat. I think the biggest change I have seen so far is the time of day that I'm eating has changed drastically and I haven't been hungry or had any cravings. As a matter of fact DH (not so supportive) brought home Ben & Jerry's for me to which I declined because I didn't want it. HOORAY!
I know myself well enough though that after 3-4 weeks I will get bored with my current menu and will need to rotate recipes. So i'm on the look out for good options. Please send me any recommendations you may have. Thx!!!
