Kale -- It Does a Body Good!

One thing I’ve enjoyed since joining SparkPeople is trying new, healthy foods. A few months ago a friend of mine gave me a container of some homemade soup she’d made. There was one ingredient I couldn’t identify -- something dark green with ruffle-y edges. Someone told me they thought it might be kale. Now, I’d vaguely heard of kale, but really didn’t know what it was. Since it seemed to add some nice flavor, texture and color to the soup, I was curious and gave it a “Google.” I was surprised to learn that cute little “garnish” had exceptional nutritional value! So last weekend I spotted it in my local grocery store and decided to give it a try. So far I’ve learned that it’s very good in salads, and also in an omelet. The price of a “head” was only $1.79, so it packs a BIG nutritional “bang for the buck!” I plan to eat more of it. Check out this “queen of greens” superfood!

    I really like kale to. It is wonderful in potato soups. I keep trying to grow it in the garden, but so far every time I get these nice little seedlings going, they disappear, so I think the snails like kale too. Next year, I am starting it inside, and then taking it out when it has a fighting chance. They have very pretty, inventive flower gardens at the university near where I live. I am amazed to see how pretty kale and chard and other leafy vegetables look mixed in with the flowers. They add a lot of color and texture, and most of them are also great cool weather plants, so they look great in the fall and early spring as well!

    Wonderful stuff with a sprinkle of salt, olive oil and lemon juice. Pan fried or steamed. Perfect with roast chicken and potatoes. We can't seem to get it all year round here, but you've reminded me to buy some! emoticon emoticon

    I have grown kale in my garden. My aunt said to put it in the crock pot with crumbled bacon and mushroom soup. It was delicious I was on my second helping when I noticed that KALE HAS CABBAGE WORMS! Somehow I have never had much liking for it after that.

    I first tried kale in a soup that they make at Olive Garden (you can get the replica recipe online). And now I like it cut up in salads. It's good to get all the nutritional bang for your buck! Thanks for the reminder - I will put it on my list.

    I too try to test out new foods, this week it's butternut squash, haven't a clue how to cook it but as you say you only have to Google these days.
