Kale -- It Does a Body Good!

One thing I’ve enjoyed since joining SparkPeople is trying new, healthy foods. A few months ago a friend of mine gave me a container of some homemade soup she’d made. There was one ingredient I couldn’t identify -- something dark green with ruffle-y edges. Someone told me they thought it might be kale. Now, I’d vaguely heard of kale, but really didn’t know what it was. Since it seemed to add some nice flavor, texture and color to the soup, I was curious and gave it a “Google.” I was surprised to learn that cute little “garnish” had exceptional nutritional value! So last weekend I spotted it in my local grocery store and decided to give it a try. So far I’ve learned that it’s very good in salads, and also in an omelet. The price of a “head” was only $1.79, so it packs a BIG nutritional “bang for the buck!” I plan to eat more of it. Check out this “queen of greens” superfood!
