ok Spark Family I need your help..........please give me some nutritional and delicious ideas for dinner.........i am so tired of chicken and would welcome a meatless dinner. And how about snacks, summer is almost over and fruit variety is about to be very slim.......i do love sugar free Jello but after awhile even that is gonna get tired...The meal plan that Sparks has is ok but not always realistic with my budget.......

Ideas Suggestions please........the exercise part is fine, its the eating thats getting hard.

    Something that is always good I find, is grilled vegetables. You can bake them if you don't have a grill! You can use whatever vegetables you have for this recipe. The name of the recipe is:'Grilled Roasted Vegetables with pineapple'. This recipe is on this site!

    How about veggie curry made with chickpeas instead of meat? Or nice mixed salad with red kidney beans, sweetcorn and red pepper? Sometimes, if I fancy a change from meat, we have tuna emoticon

    Do you eat couscous? I buy it in bulk and keep it in the freezer until I cook it. (Keeps the bugs out!) It goes a long way, and can be dressed up with whatever vegetables are in season. I make it with water, but you can make it with vegetable, chicken or beef broth for more flavor. I add walnuts (also bought in bulk) for a tasty crunch. You can also cook it and chill and mix with dried fruit, herbs and cheese for a cold salad. I make sure to get the Whole Wheat couscous, which can cost a little bit more... but it is worth it!
