Weekend Update - Food Blog

It would have been easy to go to the comfort food this weekend. With all the emotions surrounding my hubby's family with my father-in-law being sick, it would have been easy to go off the deep end. Instead, I made it a healthy filled weekend!

Saturday morning I took my mother-in-law out for breakfast. She picked IHOP which I have never been to before. I was nervous because I have heard that it is pancakes loaded with lots of good stuff. But I was very surprised to see that they had a lot of healthy options as well. My breakfast..... I picked the 2 whole wheat pancakes with walnuts and blueberries topped with sliced bananas and 2 scrambled eggs. Our waitress asked me if I wanted no sugar syrup so I opted to try it out. It was really good so later in the weekend I picked some up at the grocery store to have on hand at home.

After breakfast we took her down to the Farmers market. Always a great place to go to pick up fresh veggies and fruit. It had started raining but luckily we were under a covered area. Here is what I came home with......

For dinner since we had lots of fresh veggies we decided to make hobo dinners. (A hobo dinner is adding a mixture of things using tin foil. You seal it up and grill making a complete meal.) We added purple onion, baby potatoes, red peppers, green peppers, and a little seasoning. On the side we grilled up apple chicken sausage. It made a quick dinner with easy clean up!

It was a beach day on Sunday for us but before we headed out, I stopped at the grocery store to pick up some more fruit. The farmers market only had blueberries and raspberries out. Here is some of the fruit I came home with......

I also bought some more blueberries, strawberries, bananas, and cherries.

We are also trying out new fruits and veggies this summer. Our new fruit to try this week was apricots. I have never eaten a fresh apricot before. I have had them dried though and I have to say eating them fresh is much better!

My tasty treat this morning for breakfast...... peaches and cream! I mixed 1/2 cup of vanilla greek yogurt with one chopped up peach. It is really good......

So I would say that I had a pretty good weekend. And better yet, my knee is finally starting to heal from my fall last week. I fell during boot camp class (tripping over my own two feet....) going way too fast. When I get into those types of classes I am always trying to beat everyone. Like it is some sort of competition thing. LOL.... So my skinned up knee is my battle wound. It shows that I work hard!

    GREAT job making GREAT choices. That is good to hear about IHop. My kids love it there, but I refuse to go because it's always carb overload. But it's good to know there are better options there now. I love your pics!!! The photos of the fruit and veggies look delicious!!!!

    It all looks & sounds yummy! I hear ya on the boot camp class, it's always like my body thinks it HAS to compete or else the world will end lol.

    Elaine, I'm very proud of you for your choices this weekend! Great job! I've never salivated over fruit before....until your blog! It looks delicious! Gonna have to get some this morning at the store!

    I am glad you were able to take your MIL out for breakfast and everything. My favorite thing at IHOP? The Denver Omelet. LOTS of veggies in it!

    Wow, your fresh foods look soooo good. Congrats on making smart choices. It is good to know that IHOP has some healthy choices on their menu now. I went two years ago and refused to ever go back because everything on their menu was loaded with fat or sugar. My daughter will be happy to hear I'm willing to go back now. She loves pancakes. emoticon
