Your favorite healthy dishes for the freezer...?

Sunday, June 12, 2011

I'd love to get some new ideas for cooked items (either single or multi-ingredient ones) to put in the freezer for quick meals. I'm thinking of getting together with a friend to do some batch cooking, so thought I'd poll my Spark-friends for input:)

I think a plain tamales in husks recipe (Any plain one will do.) would be a good choice for freezing, because you can make various kinds, chicken, pork, beef, turkey, etc., freeze them individually, in twos, or whatever you think you can eat, and then just grab and go! They keep for about a month in the freezer.

Oh, and another thought would be meat pies, or empanadas, because you can do meats, veggies and cheese, pizza style, or apple, etc. One dough, many fillings, off to freezer...and wrapped in appropriate portions.

We use wonton wrappers to make pizza rolls, spring rolls, you can even do pot stickers...it's another endless possibilities thing and the wrappers are so nice and easy to use because they're already made and just waiting to be filled. You could even do chicken and broccoli, or cheese and spinach, and so on. I think filo dough may be another endless possibilities options.

I like the Spark Recipe for Turkey and Black Bean Sloppy Joes. We prefer to eat it in a bowl like chili instad of on buns. This is easy to prepare in larger batches for freezing.
